Easy and Healthy Taco Salad Dinner

Can you guys believe it is already September 3rd? 

Like WHAT? Where has this year gone? 

Anyways that’s that beside the point of today’s blog post… 

Ever since moving to North Carolina, Matt and I have been trying to get back to our healthy eating habits (With a little bit of Chick fil a here and there if we are being honest). With that, we have been making some big salads for dinner a few nights a week. 

We have done cesar salad, greek salad, taco salad, just all the salads. We love it because you can easily make it a meal by throwing in a protein source. 

Today, I’m going to share with you a super simple taco salad we love to make when we are craving anything mexican (Taco Tuesday anyone?). 

This recipe would be great as a meal prep idea for lunches as well because it makes 4 servings. 

Ingredients for Our 4 serving TACO SALAD: 

Taco Meat: 

  • 1 lb lean ground turkey or beef
  • Packet of low sodium taco seasoning 
  • 1 Tablespoon of olive oil

Salad Mix

  • 4-5 cups of chopped romaine 
  • 2 cups of mixed greens
  • 1 cup grape tomatoes, halved
  • A small red onion, chopped 
  • 1 cup mexican shredded cheese
  • ½ cup corn, canned (drained) or off the cob
  • ½ cup black beans, drained
  • 1 avocado, sliced or prepared guacamole 
  • 1 tablespoon cilantro, chopped 
  • A few tortilla chips for the side 

Dressing: 

  • ¾ cup plain greek yogurt 
  • ¾ cup salsa
  • A squeeze of lime 
  • Chile powder, garlic powder, onion powder, paprika, cumin, salt and pepper all to taste (You could use some of the taco seasoning packet for this as well) 

Instructions: 

  1. Add olive oil to a pan, add ground turkey/beef and seasoning to the skillet. Allows turkey/beef to brown and cook through, while stirring occasionally. 
  2. Next, prep all salad ingredients and dressing while turkey is cooking 
  3. Allow turkey/beef to cool for a few minutes
  4. Place all ingredients into large salad bowls, mix well and eat up!

That’s it! Super simple, and quick for a filling weeknight dinner or lunch meal prep.
